Shiitake Salad with Quinoa & Spinach
This meatless warm salad makes a perfect main dish.

Serves 4

Ingredients

Qty Unit Ingredient
2 lb Shiitake mushrooms - fresh, stems removed
1 1/2 C Quinoa
1 lb Baby Spinach
1/2 C Red-wine vinegar
2/3 C Olive Oil
1 1/2 C Fetta cheese, crumbled
Salt & pepper, to taste


Instructions

Heat the broiler, setting the rack 4 inches from the heat. In a small bowl, whisk vinegar, oil, 1 teaspoon salt, and 1/4 teaspoon pepper. Toss mushrooms with 1/2 the dressing on a broiler proof baking sheet. Broil until most of the liquid has evaporated, tossing occasionally, 20 to 25 minutes. Place the spinach in a large bowl, then add the hot mushrooms, quinoa, and the reserved dressing, tossing to combine. Top with crumbled feta and serve.
