Texas Style Bean Casserole
Another of Shelley's fall favorites, this recipe is a delicious kid favorite.

Serves 8

Ingredients

Qty Unit Ingredient
1 Tb Olive oil
1 ea Onion, chopped
1 ea Red bell pepper, chopped
1 Can Corn kernels - 14 oz or frozen
1/3 C Green olives (pitted), chopped
1 C Refried Beans
1 Can Black beans - 15 oz, drained
3 C Corn Chips
1 C Cheddar cheese - grated
1 ea Jar salsa - 15 oz


Instructions

Preheat oven to 400. In a large skillet over medium high heat saute onions in oil until softened - 5 minutes add corn and olives and cook until heated through. Meanwhile mix together black and refried beans in a bowl. Layer the chips in a baking dish pressing down to flatten. Layer with beans, then corn and onion mixture, salsa and cheese. Bake covered 30 minutes then uncovered for another 10.
